Coffee needs ~72 hours of rest after roasting. Mondays give every bag we send the full weekend to settle.

Why we ship on Mondays

Freshly roasted coffee tastes like a nail gun. The first day it's harsh, raw, the volatiles are still exiting. Two days in, most of the noise has quieted. Three to five days is the sweet spot — open, expressive, still bright.

We roast Fridays. Coffee rests over the weekend. We ship Monday. By the time a bag arrives on Tuesday or Wednesday, it's inside the window.

This is not a novel insight. Every roastery that sends coffee by mail thinks about degas timing. What is unusual is being honest about it — most subscription brands will roast-to-order from a Tuesday order, meaning the coffee lands on a Thursday and needs another 24 hours to be drinkable. We shift the schedule so the inconvenience is ours, not yours.
