We didn't build a brand.

We built a habit.

Twenty-seven Mondays a year, we roast what landed the week before. The rest of the year there's nothing to ship — and we've learned to be honest about that.

Every lot on this site is traceable to one farm, one picker crew, and one fermentation protocol. No blends, no mystery “roaster's choice.” If we can't tell you who grew it, we don't sell it.

What we're after is the same cup twice, served six months apart, from a bag that cost less than the latte it replaces.

STEP01

Grind coarse

The size of coarse sea salt. Fine grinds over-extract in a v60; you want clarity, not punch.

STEP02

Bloom for thirty seconds

Double the coffee weight in water, just off the boil. Watch the crust rise and fall.

STEP03

Pour in spirals

Start from the centre. Three pours of 120g each, 45 seconds apart. No stirring.

STEP04

Stop when it drips

Total time 3:30 to 4:00 for 18g of coffee and 280g of water. Weight, not stopwatch, wins.
