Acevedo Lot 12

Pink Bourbon is a cultivar with an asterisk — nobody is quite sure whether it's a true sibling of the Red and Yellow Bourbons or a distinct varietal altogether. What's not disputed is what it tastes like. Thin-skinned, aromatic, almost floral.

Alfonso processes this lot as a honey — meaning the mucilage stays on the bean during drying. The sugars concentrate, the acidity softens, and what comes out is syrupy and orange-peely in a way a washed Pink Bourbon would never be.

This is the lot for mornings where you want the coffee to be the event, not the fuel.
